Last night we went to our friends Stef and Mike's house for Potstickers, tea, coconut cake, and lots of laughs. We had a great time talking and goofing around. The guys spent a lot of time geekin' around on the computer. Stef and Mike also gave us some good advice about my new blog, which is still under construction. I can't wait!
The week-end is almost over. :-( We're off to my parents for our traditional family Sunday dinner and then we'll probably watch a move. Right now we have "Like Water For Chocolate" out from Netflix. I'll let ya know how it is.

I just baked a wonderful coconut cake to take to my friend Stef's tonight. My mother-in-law gave me the recipe and it is to die for. Ooey, gooey, coconutty paradise. Here is the recipe:
A box of Duncan Hine's cake mix (I use either yellow cake, or coconut cake)
1 can Coco Lopez cream of coconut
1 can Sweetened Condensed Milk
I tub Cool Whip
Sweetened flaked coconut
Directions:
1) Bake cake and follow directions on the box
2) As soon as it is done, poke holes throughout the cake using the handle of a fairly thin spoon.
3) Pour Coco Lopez and Sweetened Condensed milk in the holes
4) Let it cool (do not put it in the fridge)
5) Ice with Cool Whip
6) Sprinkle flaked coconut
7) Refridgerate for a couple hours before enjoying. :-)
If anyone tries it, let me know what you think. It it a really great cake recipe.

Well, I'm sure this won't make a difference to anyone because I doubt anyone has started reading my blog just yet. It's been up only a day. Last night my wonderful hubby saw how frustrated I was with this free blog with so few features, so he purchased a domain for me and is going to create a better one this weekend. James I love you!!
I will be sure to alert any teaswappers as soon as the new one is up. I'm shopping for templates now. :-) Anyone know a good place to look for free templates? I want something girly and pink and flowery.

Tonight my hubby and I are going to watch "Salaam Bombay!" It's an awesome movie about a young boy struggling to make it in crowded, destitute Bombay (Mumbai). I am a major foreign film buff. Some great movies we've seen lately are "Eat Drink Man Woman," "The Scent of Green Papaya," and "Whale Rider." I'm going to make us some nice Rooibos Earl Grey and we're going to sit back and relax.

I'm not so sure I'm going to stick with this free blog. I told myself I wouldn't pay for one but I think I've changed my mind. An upgrade may be necessary to completely satisfy me. :-) The sad thing is I know next to nothing about html code and so my poor hubby will have to design it and painfully and slowly teach me. Oh well. What's a little work for a lot of fun recipes and pics?
I have been wanting one of these for a long time. I love the thick, creamy coffee you get in Vietnamese restaurants. I'd like to try to make it at home. Yummy :-)
Before I start writing about everything I want, I should tell anyone who is going to read this a little about myself. I live in Georgia (bummer). I lived in Washington, D.C. most of my life and I miss the fun of a big city. Starbucks, ethnic restaurants, awesome stores are all things I do not have down here. I'm surviving though. I followed my family down here because I wanted to be close to them and my boyfriend at the time followed me. Now we are happily married :-) I am 23 and I am graduating college a month from today. I am currently wrapping up student teaching and we are planning a trip to Korea just a week later. I've got to upgrade my blog before then so I can post pictures!
More about me later . . . Time to think about dinner.
